U veliku teču od inoksa stavimo smokve, šećer, vanilin šećer i limun izrezan na fetice. Teču stavimo na laganu temperaturu uz stalno miješanje. Kada se smokve stope sa šećerom malo i povečamo temperaturu. Kuhanje traje otprilike 2,5 do 3 sata uz stalno miješanje.&lt;br /&gt;&lt;br /&gt;Staklenke prokuhamo i iscijedimo od vode. Gotovu toplu marmeladu ulijemo u vruče staklenke. Napunjene staklenke stavimo u peč da se sve skupa sterilizira. Držimo 10 minuta da uhvati koricu. Zatim se izreže na tanke ploške 12 dkg slanine i 10 dkg kapule. Na željenu šipku-ražnjić sliži se 1 popečka svinjetine, 1 popečka govedine i jedna ploška slanine, ploška kapule i tako redom, dok se sve ne izreda, da se skupa drži. Ražanj se  stavi po duljini tepsije peći u pećnicu. U tepsiju se stavi malo vode, u koju kaplje sok, pa se time meso polijeva. Kad se ohladi dobro se tuče da postane kao brašno.&lt;br /&gt;U jednom loncu tuče se 25 dkg maslaca, 20 dkg šećera, 4 žumanca, lagano kuha dok se počne zgušnjavati, odstrani s vatre i u ovo uspe krokanat i s vrućim premažu se oblate. Za ovu smjesu uzmu se 3 oblate. Prave se mali roščići u veličini malog prsta i peku pri umjerenoj vatri. Kad su pečeni, odmah se vrući dobro pospu vanilijinim šećerom. Polako se izlije na mramornu ploču i neprestano miješa dok pobijeli. Zatim se doda 25 dkg oguljenih samljevenih badema, polovicu oraha, pola paketića čokolade, što više kandiranog voća, komadiće mliječne čokolade i kotonjade i sve se dobro rukama mijesi. Razdijeli se sve u tri dijela. Jedan se dio potamni čokoladom, drugi pocrveni alkermesom, a treći ostavi bijel. Jednu kutiju ili malu tepsiju obloži se uljenim papirom, pa se izlije prvi dio smjese na koji se doda isjeckano voće, dobro pritisne i izjednači, izlije se drugi dio, doda isjeckano voće, dobro pritisne, a povrh doda treći dio. Kad se školjke otvore, izvade se i očiste od kora, a meso se uspe natrag opet u ulje, da kuha još 15 časaka. Zatim se doda 25 dkg očišćene i oprane riže, dobro ožuti i po volji dodaju 2 žličice konzerve od rajčice. Ako nije dovoljno vode, još se malo dolije. Pri koncu pospe se obilato sirom. Kad se sve prokuha i krompir raskaši, stavi se unutra pastrva i neka tiho prokuha 10-15 časaka. Zatim se odmakne s vatre i pusti stajati 10 časaka. Složi se na tanjur i polije juhom u kojoj se kuhala. Najprije treba da vrije 10-15 časaka naglo, a zatim tiše 50 časaka. Onda se pusti da se ohladi, kalupe se žlicom žličnjaci, slože lijepo na tanjur i pospu se na ulju ili masti zaprženom kapulom. Nakon što uzavru, kuhaju se još po prilici 5 časaka. Kad se skuhaju, izvade se, ocijede, raspolove po duljini, odstrane im se kosti i glava, da ostane čisto meso, te lijepo poredaju na tanjur. Međutim se na 1 kg skuša uzme 4-5 slanih srdela, dobro očiste, a meso sitno isjecka sa 2 žlice kapara i sve ovo zaprži na 1/4 litru ulja, doda čašica kvasine i polije povrh skuša, pokrije i pusti da počiva neko vrijeme. Čim više počiva, tim je bolje, a najtečnije je, ako se jede hladno. Pirja se pola sata i dolijeva vodom po prilici do 1 i pol litre i sve se protisne kroz cjedilo za juhu. Učini se lagani zapržak od žlice ulja i žlice brašna, posoli se, zapapri i onda uspe 15 dkg riže. Ugori imaju masno meso, osobito oni iz Vranskog jezera i Neretve. Ugor ima u mesu mnogo drača.&lt;br /&gt;&lt;br /&gt;Uzme se vrlo malo ulja, 2-3 žlice na 1 kg ribe. Blijedo se zažuti 1 lisnato izrezana kapula, doda ugor, koji se također malo zaprži sa svim strana. Odstrani se s vatre, pa doda nekoliko listova peršina i 3-4 kriške isjeckana češnjaka, posoli, zapapri i doda žlica konzerve, a u doba rajčica 2-3 mesnate rajčice, te par žlica kvasine i vode da riba bude pokrivena. Ovo se ostavi da naglo provrije, pa se pusti još 1 1/2 sat kuhati na sasvim laganoj vatri. Ako je premasno, oduzme se mast. Meso se iz trupa i klješta pomno izvadi a lupina opere. U šerpu stavi se 3-4 žlice ulja i zažuti 1 sitno isjeckana kapula, 2 kriške češnjaka i zelenog peršina. Doda se meso rakovice i meso jedne pečene, od drača očišćene ribe (lubin isl.), prema potrebi nešto u vodu namočena i ožeta kruha, par zrna papra i dobro zamiješa. Kad je sve gotovo, doda se limunova soka i zatim se time puni kora. Povrh stavi se malo izribana siram malo mrvica te par kapi ulja. Zatim se stavi u pećnicu 1/4 sata da malo požuti. Kuhaju se u obilatoj vodi 2-3 sata. Moraju biti dobro kuhane, jer inače naškode. Tada se ocijede i stave u zdjelu s malo vode u kojoj su se kuhali, poliju dobro uljem, zapapre i posole se tek tada, jer bi osoljeni tijekom kuhanja otvrdnuli. Za 1 kokoš uzme se 25 dkg suhe slanine, izreže na sasvim tanke ploške, obloži njima naokolo kokoš i zaveže skupa sa slaninom. Unutra u kokoš stavi se 1 žlica masti i tako pripremljenu položi u tepsiju i poklopi ugrijanom pekom. Na maslacu isprži se 1 izribana kapula, doda 2 žlice brašna, zalije sa 4-5 žlica hladna mlijeka i doda samljeveno meso da se malo isprži. Pusti se ohladiti. Kad je hladno doda se 2 sirova tučena jaja. Sve se dobro izmješa i kalupe se mali kroketi za prst debeli, provaljaju u brašno, pa u tučeno jaje i u mrvice. Sve se lagano izmiješa i izlije u premazanu i obrašnjenu tepsiju. Pri tijestu stavi se 1 kg trešanja ili višanja bez koštice i peče pri umjerenoj vatri a pri koncu jačoj. Lišće ružmarina izmrviti. Tunjevinu narezati na komadiće, a ulje sačuvati. Špagete skuhati i dobro ocijediti. U prikladnoj posudi na ulju od tunjevine popržiti nasjeckani luk. Dodati koncentrat rajčice, posoliti, popapriti, začiniti peršinom i dodati malo ružmarina. Lagano kuhati dok se umak ne zgusne, a onda umiješati narezanu tunjevinu. Tim umakom preliti kuhanu tjesteninu. Popari se vrućom vodom, razreže u dva djela i povade koštice, te doda sok od 1 limuna. Nadjev se promješa i ostavi da malo postoji. Razvučeni list se poškropi rastopljenim maslacem ili mašću, pospe sa 2-3 žlice maraskinom naškropljenih mrvica, zatim nadjevom od jabuka. Zatim se sipa lagano 16 dkg mekanog brašna i neprestano miješa da se dobije glatka smjesa. Opet se primakne k vatri i miješa da postane gusto. Kad se malo ohladi doda se jedno po jedno 4 cijela jaja i dobro tuče 10 minuta.&lt;br /&gt;Na vodom poškropljenu tepsiju slažu se žlicom male hrpice, udaljene jedna od druge i stavi u dobro ugrijanu pećnicu, da se peče 20 minuta. Za vrijeme pečenja ne smije se peć otvarati. Napose se prosije 25 dkg brašna sa pola omotića pecivnog praška i tuče tvrdi snijeg od 3 bjelanca i dodaje u smjesu, izmjenično malo brašna, malo snijega. Kad je sve dobro izmješano, razdjeli se u dva djela i jedan dio ostavi kakav jest a u drugi se doda 2 štapića omekšane čokolade, ili 2 žlice kakao. Tepsija se premaže i slaže 1 žlicu bijele mase, 1 žlicu tamne mase. Odozgo se presvuče viljuškom preko smjese i stavi peći. Tvrdo skuhati jaja, odrezati im oba vrha da stoje, pa odozgo žlicom izdubiti žumanca. Zdrobiti žumanca u dubljoj zdjeli, dodati otopljeni maslac, malo soli i papra i usitnjenu skušu. Miješati dok se ne dobije glatka smjesa, dodati malo limunova soka po želji.
